I weighed in at 251.1 this morning. On my last ww weigh in on Monday I weighed 251.7 So I am down 0.6 pounds. My goal is to lose 0.5-1 pounds per week so I am right on track with my goals. I want to lose slowly because I think I am more likely to keep it off that way. As long as I am losing I am happy. And it's better than seeing the scale going up!
I made a super healthy veggie frittata, which is my new obsession, and it had 12 eggs in it (eggs are zero points on ww) and a ton of chopped sauteed zucchini and some sauteed onion too. I put some feta cheese on top and also an entire bunch of green onions, chopped. It's really good! To me, it tastes as good as quiche and it's much easier to make and way healthier. The nutritionist I talked to recommended I try frittatas and it's great.
I am over the moon to see my weight going down the last 3 weeks. I feel great! and my mom even mentioned today that my face looks slimmer and I look like I have lost weight. The best is yet to come as long as I just keep following the plan and exercising!
I went for a long walk this morning with a friend and we did 5 miles, and 13,000 steps! I am working on doing 10,000 steps every day.
I am not restricting any specific type of food. For example, I don't cut out carbs or sugar or anything because due to my binge eating disorder my therapist says that restricting those foods will ultimately lead to a binge later on. Instead I will eat small portions of those foods when I can fit them into my points so I don't feel deprived and then I don't feel the need to binge on them at other times.
We got tiny, minuscule wasabi bowls and we use those to eat ice cream. It's really impossible to fit a huge amount in there so it keeps us honest.
Fritatta Recipe:
-12 eggs
-4 to 5 zucchini (enough to fill pan 3/4 full)
- one onion
-2 Tbs olive oil
-handful of fresh basil or parsley
-one bunch of green onions
-salt (garlic salt optional) and fresh ground pepper
-4 oz feta cheese
Preheat oven to 350. Put cast iron pan on medium/high heat and add olive oil. Medium Dice onion and zucchini and add to 12 inch cast iron pan. Cook until soft and reduced by 1/2 and liquid has cooked off. Meanwhile whisk eggs together in a bowl and add salt and pepper. Chop green onions and finely chop basil or parsley. Once zucchini and onion are softened and liquid has cooked off (about 15 minutes) then pour the eggs on top of the vegetables and cook about 4 minutes. Then sprinkle chopped green onions on top of eggs, sprinkle feta on top, and top with salt and ground pepper. Bake in heated oven for 20 minutes, checking occasionaly to see if eggs is firm on top. when egg is firm remove from oven and leave to cool. once cool. sprinkle chopped fresh herbs on top.
